I also sew and I think some structure in the shoulders of a blazer is important, or else it just looks slouchy and messy.If you remove larger shoulder pads, which can be very dated, maybe you could reinsert smaller ones.Another option is just making a small shaper out of felt or another stiffer fabric to reinsert, just so the shoulder doesn't.
